To prepare the cucumber cups: Cut off the ends of the cucumber, then slice each cucumber into three pieces, about 3″ long. Using a vegetable peeler, peel off about 3/4 of the cucumber skin, leaving a little on the bottom. With a melon baller, scoop out the seeded part of the cucumber, leaving about 1/2″ at the bottom of the cups. Be careful not to scoop out too much at the edges, otherwise the cups might leak!
